Rejecting incoming mail for old employee's

I am new with Exchange 2000 and was wondering if there is a way to reject incoming mail being sent to certain addresses. The queue fills trying to reach these e-mails addresses, even when the mailbox has been deleted. Any help would be great.

By default any emails sent to addresses that do not exist are passed to the administrator.

Set up a mailbox called old_users or something. Add the old employees names to it. Create a server side rule in Outlook that replies to sender saying user has left the company.

Then all mispellings of existing employees can still come to administrator....
 
Bad idea. What if users spoofs the e-mail? Yup mail loop.

Ex. mail from:dan@dan.com Dan
Microsoft Exchange Support @ Microsoft
