If you change the regional settings on a machine running SQL Server, will it automatically recognize the settings and understand different date formats according to the regional settings? For example if I change my machine from English(US) to English(Canadian) will it understand the date format being passed of dd/mm/yyyy?

I don't think so. You will have to consider that when writing your queries. When your dates are stored on the server they will probably be changed to something your collation understands and...there can be some nasty surprises...

Please look for "international Transact-SQL statements" in SQL BOL.
