Redirecting to different servers

OK, there's what I want. Email for User-1 to go to one exchange server and mail for User-2 to go to a different Exchange Server.

I'm using the mailertable at present to throw everything to one server with an entry of
domain.com esmtp:[10.192.3.1]

could I do

user1@domain.com esmtp:[server1]
user2@domain.com esmtp:[server2]

or does mailertable only accept domains?

Would like to know if this is possible before I make any changes.
