Recommendations for Data Storage to Build a Large Video

I have a Sony PC-110 camcorder (uses 1 hour mini-DV tapes) and a Mac G3 with 40G hard drive and an attached 1G Jaz drive. I am building a film from 5 Mini DV casssettes. I plan to feed the completed 2 hour video from Premier (v.6) through my Sony camcorder to a standard VCR recorder. On a small scale this is no problem.

However, I am quickly running out of data storage space for the clips I wish to use. A prior response in this forum suggested building it in multiple 5 minute segments. How do you knit them together?

Can a multi-hour digital tape deck be used to do this more painlessly? Any recommendations?
