rebuilding a Software RAID

I have a small server at home 2003 with a software raid (3 drives). One of the drives crashed, and in attempting to rebuild the raid, I was presented with limited options, but wound up only formatting the drives.

I'm working on a data recovery option and need to float this past some one with more expertise:

1) remove RAID 5 binding
2) recover data from formatted drives
3) rebuild raid (and this is the part I need the most help with)
 
I am not sure I understand the question. You have a software-based RAID 5 array with 3 drives, and you replaced the crashed one. Now you want to get the array back to what it was before?

In that case, you should rebuild the array (option #3) to get back to full functionality, with 3 disks instead of 2.

Does that answer the question? I am not sure what you mean when you say you "wound up only formatting the drives." You mean you formatted over the existing data in your RAID 5 array, including the 2 surviving disks?

If so, you have just gone beyond my experience/ability to help you.
