Rebuild VMWare servers from recovered data

Hello,

I had a critical disk failure on my IBM DS3400 SAN. I lost 4 disks of a 16 disk array and therefore my Raid failed. (this is a separate issue....)
I have now sent my data to a recovery company who are trying to recover the data from the array. They have informed me that, worst case scenario they will restore all the data to am image which I can reload onto a rebuilt SAN. What I need to know is can I restore my Virtual servers from the VMDK files? (if they are recovered) I am pretty new to VMware and am not sure what minimum data is needed to restore servers.
Any advice appreciated.
 
you can recreate the server's using the same specs(hopefully this is documented) and then point them back to the existing vmdk files. Depending on the size of you vm's you may have multiple vmdk files that make up a virtual machine. If you have a support contract with vmware you may want to contact them for additional help incase the vmdk files are in a dirty state.
