I need to post a form online that I want the clients to fill out and Im afraid that not everybody has word. Can I make a PDF with the option to have the clients fill in the blanks and then e-mail it back to me
. If so , what version can it be done with ?

You'll need a "full" version of Acrobat to author the form, I think Standard Edition will do it.

The users will need Reader. The forms can be submitted back to your server as a standard HTTP Post, as an FDF (special Acrobat form data format) or as XML. You set that up in Acrobat when you design the form.

It works well.
