Re-building and migrating Exchange server

We had a major problem with our Exchange server a while ago, and were only able to return it back to an element of normality by restoring the program files (C: drive) from a backup. The data, which was on a separate drive was left intact. We aould like to re-build the server, and also migrate it into another organisation (we've just been taken over and need to have all mail servers in the same organisation). Is there any way of easily achieving this, whether through the use of BackupExec, or otherwise?

The easiest way would be to extract the contents of the mailboxes using a tool called exmerge (available from Microsoft)
It will convert all the mailboxes to csv files.
You can later import the data back into (with the tool) your new domain after you create new mailboxes or you can use the import utility from Outlook client and have the user import it back in.

Mwarnon has the right idea but not entirely correct. You use exmerge to export the mailbox to a pst file. Then use exchange admin to export the GAL. Now go through the list and change the organization and such on each mailbox to reflect the new organization. Now import that to the other site and then use exmerge again to import all the mailboxes. You might also look into using headers.exe to create a headers file so you export every bit of information about the mailbox. I did this for 2000 users and it was a ton easier.
