Random deletion of emails? Outlook 2K

I have a user who is claiming that emails are being randomly deleted from her inbox, sometimes they are in the deleted items folder and sometimes they are gone completely. Anyone come across this before? We are running Exchange on a Win2k server network. I have run the usual virus scans etc and not turned anything up.
(I haven't ruled out user error but hey! she's admitting nothing so i have to give her the benefit of the doubt)

Have you checked for incorrect or unintentional mail rules?

Yes. Should have mentioned that on the first post. There are no rules set at all.
