Raid 1 with swappable drives??

I have a intel D915PBL motherboard with built in sata raid support. I have 3 seagate 120 gb hard drives, 2 of which are in drive drawers so they can be removed from the system and taken offsite for storage. What I want to do is change the drives over once a week so there is always a fairly current mirror stored offsite. What I don't seem able to do is mirror to 2 drives. When I remove the drive that the main one is already mirrored to and put the 3rd drive in it shows up as a non raid disk. I can mark it as a spare but as soon as the system reboots it's back to non raid. Any ideas anyone?
