Raid 1 needs more space

I currently have a RAID 1 configuration. One of the drives is dead, the other is running fine but needless to say the drive is WAY to small. What is the ideal method to get a 2nd set of drives in there that are quite a bit larger and transfer the drive over so its a duplicate minus the size problem? I need to insure that I can get 2 different partitions on there and make them different than the current ones so they can be used to their full potential. Thanks!
