I was trying to find out exactly what kind of bandwidth gets eaten up by the video portion of a video call. I was curious if the following statement holds any truth?

"If the display is a standard 320X240 at high quality and the video is able to sustain 30 FPS you're using roughly 875KB per-second one way for the picture alone.

First you need to find out the CODEC it is using.

Then do a google for bandwidth requirements of that codec.

Be a little careful, some with say the bandwidth of the actual codec excluding all the overheads etc.

Most people spend their time on the "urgent" rather than on the "important."
