Question: Create a VHD for backups?

I need to be able to do full backups every night of my data partition. I have another server that has a lot of free storage running on a RAID 1 volume. What i want to do is the following but wanted to know if this is a bad idea. I need to be able to keep at least 1 weeks worth of backups. I will be backing up about 40 GIG of data daily.

1) Host Server (2008R2) - Create a VHD unsing UNC path on another server (600 gig fixed size).
2) Assign it a drive letter in Disk Manager
3) Configure Windows Backup to use that drive Exclsuivly. I know the drive will then be hidden from windows explorer but will i be able to attach this created VHD to another host and restore files?
