Quad Core vs Dual Core ?

Hi can anyone give me there views on my new server purchases, I am going to buy 2 new servers

1 server will be running exchange 2007 and the other SQL workgroup 2005. For the same price I can get a intel xeon 1.6 quad core or intel 3.0 dual core. What would be the best route for me to go?

I'm Certifiable, not cert-ified.
It just means my answers are from experience, not a book.

So you would go for each server having a single dual core 3.0 ghz other than a single 1.6ghz dual core
