Is it possible to set Exchange to pull down emails from an ISP for about 5 different users. And then have Exchange basically control the in house access to emails. ie. Have exchange poll our ISP every minute or so......when mail is recieved, it would be transfered to the exchange server and from there, all users would access their emails through exchange. Thank you in advance for your help.

I suppose those 5 different users would need to have a different namespace than the rest of your users. External DNS would need an MX for that namespace pointing to your exchange box (or firewall). You would also have to include a recipient policy for these 5 users so incoming mail knows where to deliver to.
Basically, this setup is no different than configuring exchange for multiple domains.
