Just export the .pst from the "old" profile, then once the new profile is established, do a file>import to merge the old .pst into the new one.
You could also do all of this using the mail applet without ever opening outlook, but you'll still have to create a new profile , and replace the new blank default .pst with the old one, which requires more playing around in that data file management window. Outlook is really flexible though!
Try both methods on a test system, and once you get the hang of what you can do with the .pst files, you'll never be confused again!
