Proving employee theft by taking a MICROS POS system offline?

I have reason to believe that an employee has been either crashing or simply taking the MICROS POS system offline during his shift in order to cover up theft. Mysteriously the MICROS system only seems to "crash" when he is working. Does anyone have any experience with how this can be done, and more importantly, what trail it may leave to prove what happened?
 
How creative. They must be doing more than taking it offline. If offline, remote printing does not happen but all transactions are uploaded to the server as soon as network connections come back. There is also offline reporting available for to print reports while offline, locally for the affected till.

Write down the time the system "crashes" and then read the server log. It tells you everything, who logged on, what was running.
