I have been tasked with adding a second email domain to our Exchange 2003 server for 5 people only. What is the proper way to do this?

Add those five users into a particular OU, with no sub-OU's. then, in ESM create a new recipient policy and make it apply only to that OU and the users contained within.

Thanks have been looking for this myself, is there anything else I would need to other than point the MX Record at the server?

Should be good. I suggest an internal exchange connector to route the two domain addresses in house...to keep that internal traffic from leaving your LAN protection.
