Program Log's in Win2K

I'm running Win2K Pro at the moment & was wondering what is the best program for monitoring the use of my machine??

I.e. Thing's like what time it was used between, what programs where used, what web sites were looked at??

The people that use my machine know how to cover their tracks like deleting IE history & My Doc history.

Advice would be great
