You could start by searching for software companies and see how they present their products. Even if they are static sites something may inspire you.
You could also take a few tips from the Macromedia site. They use Flash to show a tour of their products. This will enable you to show how it works with animated cursors and windows, buttons, functions and procedures. You can also get very creative in the way you switch from one area of the software to another using fading & tweening techniques etc.
Something like this would be easy(ish) to do using screen shots of the software.
