Print spool copy

I have been tasked with monitoring a specific printer. What they would like to have done is to have a copy of all the print jobs sent to a particular printer also print a copy of the job to a file, this way an additional copy can be viewed / printed at a later time. Alternatively, as a poor second choice, the print job would print to a second printer at the same time as it prints to the designated printer. This should happen unknown to the user with which pretty much leaves out checking the "keep printed documents" block on the advanced print properties page.
So far my search for a solution has been drawing a blank on how to achieve this redirection. Any ideas?

Elegant solutions are nice, but right now I'll settle for whatever works.
