Could someone point me in the right direction as to which one is better? Maybe a white document or something thanks in advance

I don't have a link for you, but here's the basic difference.
In a server queue, the server does the spooling, the admins can control who can print to which printer and when. The admins can delete individual print jobs or clear entire queues, start and stop the spooler, and specify which driver will be used by all client machines. If the printer's IP or subnet is changed, it need only be changed in one place on the server for all clients to continue printing normally.
When printing by IP, each workstation does it's own spooling, uses it's own drivers, has it's own IP port setting. Network admins cannot control who sends print jobs, nor can they clear stuck jobs or restart a workstation spooler without visiting that machine (or using remote control software). If a printer's address is changed, then someone has to change every workstation's port setting.
Generally if this is a small LAN with only a few people, IP printing is not difficult to manage and will be slightly faster. On a large LAN or a WAN environment setting all users to print by IP will just shoot the support team in the foot.
