As far as I know there isn't a print preview mode per say, but you do have a preview mode for viewing your document. It's the bottom two buttons on the toolbar "normal view mode" & "preview view mode" or "W" from the keyboard.
See your 'View' menu for options. If you are interested in a color separation preview, I always print separations to a PDF to view onscreen without wasting paper/film/plates.
The EXPORT PDF function will not allow separations so you would need to use the normal print dialog to print to a postscript file on a virtual printer - - and then distill it into a PDF with Acrobat Distiller. I do this with every page layout application when I question how the document will separate.
You can use the EXPORT PDF to create a one plate separation by choosing 'Advanced>Ink Manager' from the Export dialog. Choose the ink you want on the plate and then export the PDF for your screen preview.
