I have a pdf with 4 process (CMYK) and 3 spot colors. I can preview on screen just fine and know that it looks the way I want it to and that our printer will be able to separate just find. However, I'd like to give them a hard copy proof that has all of the process colors and just one of the spot colors turned on. Is there an easy way to do this? I try printing separations but that gives me each plate on a separate page.

Yes in the Print Dialog.
Click "advanced", and go into the ink manager. Tell acrobat to print only the colors you want to see. As far as separations go, your printing device should have an option called "Merge Separations" or something like that. Check the print dialog for printer specific options.
