When you show the interface of a port for example and you see the following:

150119586 packets input, 332937997 bytes, 0 no buffer
Received 117056 broadcasts (0 multicast)
0 runts, 0 giants, 0 throttles
0 input errors, 0 CRC, 0 frame, 0 overrun, 0 ignored
0 watchdog, 117056 multicast, 0 pause input
0 input packets with dribble condition detected
145746048 packets output, 4006422129 bytes, 0 underruns
0 output errors, 0 collisions, 1 interface resets
0 babbles, 0 late collision, 0 deferred
0 lost carrier, 0 no carrier, 0 PAUSE output
0 output buffer failures, 0 output buffers swapped out

The total number of packets input, the bytes and the total number of packets output and the respective bytes, how long does it keep before the counter is cleared?

Forever. Or until rebooted or manually cleared with "clear counters".

Do you see another stat, something like:

Last clearing of "show interface" counters 19w0d

That last part is 19 Weeks 0 Days. It tells you how long those stats have been gathering.
