POP3/SMTP

The company I work for had some problems with their email the other day becuase of a "change from POP3 to SMTP."

I thought that one was used for outgoing mail, and one for incoming mail....but I think I may be wrong there.

I would appreciate it if somebody could clear this up, and briefly outline the benefits of such a change?

A company that user POP3 email generally picks their mail up from an ISP so the MX record for the domain points to the ISP mail server.

The other option is for the company to run their own mail server and have the MX record point to that server. In this case they do not have to connect to their ISPs mail server using POP3 but mail is delivered directly to thier own server using SMTP (ie. server to server).
