I have a customer with a SoundStation IP 6000. This is probably a dumb question but can it be converted back to analog?

Depends on the exact model - most are no, they are just SIP based, but the Polycom Duo also has a jack for an analog line (or extension) as backup.
 
You have two options:

have a SIP to PSTN gateway and use it in reverse.
Sell it and buy a SS2 :)
