I'm experienced with Nortel ICS. I had a company contact me wanting me to service an existing option 81c. It would be nice repeat business for our new company, but how vastly different is it from the ICS? Should I walk away from this or take a flyer on it?

Big differences. Norstar admin is all set based, CS1K is terminal based. There are very few, if any, similarities between the platforms. If you've done any CS1K/Meridian 1 work in the past you'd be in decent shape.
