I am trying to place text from a Word document into an InDesign page. When it comes in, the paragraphs are numbered. How do you re-format so that the numbers disappear?
 
One of two things is happening here.

You have a numbered paragraph in before hand and that setting is still selected in your paragraph formating. Hence it will use the Character Style or Paragraph Style that is applied here and use that in the Text Placed. Or you have a numbered paragraph style applied to your Word File that is an override to the style (showing a plus sign beside the style)

You need to:

(A) Check that all you MS Word files are styled properly (no plus signs beside the style formatting)

(B) In InDesign: Make sure that your character styles and paragraph styles are set to none and basic paragraph respectively.

(C) Import the Word file into a blank InDesign file, export it as a RTF, close the InDesign file (no need to save this) on the Show Import Options at the placing stage, (choose to Use the Word Style Definitions).

(D) Import the new RTF into your real InDesign Document.
