Placing PDFs:100%K Changing to 4-Color Black

I work in a prepress dept and I have a customer who has sent me a PDF of their file for printing. I need to place it into InDesign to set it up for output. The black text in the pdf is 100% Black, which is what I want it to be, but when I place the pdf into InDesign, for some unknown reason the black text is changed into a CMYK black with color coming out on all four plates. I am very confused why it would be doing this. Can anyone tell me what can I do to have the black stay 100% black like it is in the pdf and not break out into 4 colors when I place it in InDesign?
 
One question, How do you know if the text is 100% black in the pdf? What program are you using to find this out?

I'm using Acrobat 6 Professional. It has a Separation Preview window that will show you all that.

Actually though, after I posted my question I continued to do research and found that my InDesign was set to some custom color settings that were causing this problem. I went into the color settings dialog box and selected the U.S. Prepress Defaults to see if that would fix it and since then I can place pdfs and InDesign will leave my colors alone. I don't know that much about color settings, but that one looked like a good one to pick and my problem is solved for now. But I would like to learn what all the color settings mean so I can use them properly.
