Is there a way to see when was the last time or date that a certain phone, DN or TH was used?

I have over 800 users and I know that there are serveral TNs that are not in used, but I do not whant to disconnect then and find out that in fact that TN was in use. So that is why I'm asking that particular question.

Does anyone know how?

I don't know of a way to do that by date. I usually look for tn's that are disabled, then idu the tn to see if there is actually a phone attacked. This works for digital sets. Stat tn's for ip sets to see if they have a set registered or not. Analog sets do not have any way to see if a phone is actually there or not though.

If its not working, get a bigger hammer!

You could also pull a call report (if you have it set up) and look for extensions that have no activity.

I typically reference the voicemail account (unless they don't have one - then yes you need some sort of CDR reporting software like Tapit). I would say at least 75% of our phone builds have voicemail. We also have a phone directory that gets updated since it is the main point of reference to contact employees so that helps too.
