Does it archive all calls made on the day? If so where does it archive them or does it completely clear them for the next day?

To answer the question -> no, not all calls.
You will need 3rd party software like Xima Chronicall for example

Handset> Call log> Outgoing will show the last twenty or so calls which would not all show up in Call Log> All.
Carrier extension level billing will provide a budget, albeit 1 month late, call record in the future.
