Is it possible to remove administrator access rights to a subsite? Our shareholders would like a site that is secure from anyone other than the shareholder group (including the administrator).
 
It is certainly possible. (But it is rarely a good idea.)

The administrator could still grant himself rights at a later time.

I agree, it's possible to exclude the administrators to certain (sub)-sites, f.e. a site with confidential data in it.

It's definitely not a best practice, because site administration would then rely on non-administrators and as we all know there will be some point the end-user needs help.

As an administrator i think you could still have elevated rights via the Policy for Web Application
