I am trying to get the CPU utilization from remote Server's and place that data into a table via a script. What would be the best way/tool that would allow me to get the CPU utilization from the remote machine, keep in mind that it could be Winows NT or Windows 2000.

You can setup a counterlog within perfmon. With win2k you can export the log file directly to text/csv/tsv file.

If you want you cacn run relog.exe on a winxp machine which allows you to convert the raw data into text/csv/tsv or export directly to a SQL server.
I think there is a simlar tool for NT but it come in the NT resource kit.
