Pen tool? 1

I've used the pen tool quite often to cut out an object or a person from a picture. This morning I was tracing the object and when I go to cut it out I only get the outline and not the photo? Is there a setting I need to choose?

So after you are done with the pen tool are you then converting the path to a selection, then inversing it, then deleting the unwanted selection?

After I'm done the selection is made and I hit ctrl x? I'm sure I did it this way. But all I get is the path?

The pen tool doesn't automatically make a selection, you may have been using the lasso before. To convert your path to a selection you need to go to the paths palette and click the third icon at the bottom to convert the path to a selection. You can now delete the selection or invert it and delete that selection!
