Pen tool only draws closed paths

Sorry, new to Illustrator and finding it incomprehensible. Can anyone tell my why the pen tool is drawing closed paths. One point ... two points .... three points and, voila, the path is closed and filled. Surely it should draw open paths until you close the path by going back to the first point?

Illustrator is not closing the paths, but the fill will always take the shortest route between endpoints, so once you leave the one-dimensional realm of a single straight line, there will be a visible fill. When drawing paths, it's usually a good idea to turn off the fill and only have a stroke until you're done, then apply any fill you want. Go to the fill box and click on the little icon with the red line through it to turn off fill.
