I will be sending my catalog created in InDesign to a professional printer. If I convert the indd's to pdf's and use "High quality print" for my pdf's, will I lose any quality (between the original indd and the converted pdf)

It depends on what export settings that you use for the PDF file. 'High Quality Print' is typically okay but your printer may have other requirements. Contact your printer to see what PDF profile that they want.

First preflight the indesign file (on file menu) to make sure there are no booboos.

"Press" is the common setting for professional printing when exporting to pdf. Text is kept extremely sharp at this setting.

Using OSX 10.3.9 on a G4

Depending on how will you send material to print house (internet or CD) you may want to be sure your pages are of more quality than what the print house requires. If the size of the document is not an issue, then go for the best quality - press PDF - or even try exporting EPS.
