Do you need to keep special formatting - tables, shading, special fonts? If you only need the data and want to extract data to work with it, there is a program that I use called Monarch which allows you to extract data from PDF files as well as text and other data files and also allows for sorting, creating calculated fields and summarizing the data, and can link to external data files to act as lookup tables too. You can then export the results to Excel, Access, text and other formats. List prices for Standard and Pro range between 500-600 though. But depending on how often you need to extract/manipulate data it can be worth it as you can also set it up to be automated with command lines, vba, etc.
In Acrobat Pro go the Help menu/Complete Acrobat help.
Click Search and use Excel as the search term. You'll get a result. Copying and pasting tables, that tells you how to do all sort of things with tables, including moving it to Excel. That copy paste title is deceiving as there's much more - ucing the Acrobat table tool.
I have converted a 927 PDF to excel, I use pdftohtml convert pdf to xml, and develop program to parse the xml, and out the excel, may this way is also useful for you.
