PDF pages turn into images on palm instead of text

I have been trying to get a few PDF books to convert to the palm but everytime I send them to the palm, the pages are images instead of text.

The problem is I can't read them. Even if I choose the full size image option. I need the text to remain text. I have Acrobat Pro and have even selected the option to add tags as the "how to" section recommends but to no avail.

Any Ideas
