how could I extract all users passwords in case I was a root user just in case I forgot one of them

well, users passwords can be found in /etc/security/passwd file but they are encrypted! so you won't be able to figure out by looking at this file what is the password!
(unless you use some extra tools to decrypt them!)

but you don't have to know the user password as a root user!

you can su to any user and access his shell!!! you can as well change any user password (in case you worry that they could forget their password!
