Hunt groups are circular. The 1st call will go to the lowest numbered extension. Subsequent calls go the extension AFTER the one that answered the last call.

What happens to the extension when he or she with the lowest numbered extension hangs up. Do the next incoming calls go around in a circle until it gets back to the lowest numbered extension?

Example, ex 10, 11, 12 in a hunt group. ex 10 takes first call, ext 11 takes second call, ex 10 hangs up, will the third call go to ex 12 or ex 10?

You can loop stations to line ports to simulate incoming calls. Equipment is CHEAP, and it's the only way you're going to learn the system.
