Partial black and white

What is the effect called where you have (for example) a bouquet of flowers, and the picture is black and white, apart from one area, which is in colour.

And how do you do it?
 
Select the area to be black and white, smash CTRL-U or COMMAND-U and desaturate.

To create the black and white version you can desaturate the image (image > adjustments > desaturate). This can give poor results sometimes. If you want greater control over the look of the B&W image read this :



You'll need to add a mask to one of the layers. Put the black and white image on one layer, and the colour image on a layer above it. Use a selection tool (e.g. the polygonal lasso) to select the area you want to remain coloured. Once you have the area selected, make sure you have the coloured layer selected in the layers panel, then click 'Add layer mask' (that's at the bottom of the layers panel). That's it.

NOTE: You may need to add some feathering to your selection before masking. Once you have your area to be masked selected, go to select > feather. You'll see what it does. Experiment with it. You can go back and forth in the history panel until you get the look your after.
