My coworker who love to one-up me infront of my boss recently critiqued a job I did that called for 100% Cyan. I just clicked Pantone Process Cyan Coated. He says I was mistaken to use that swatch but I see absolutly no difference between that and just 100% Cyan 0% MYK. Is this wrong?

It might cause problems because even though it may be the same color, it could be interpreted as two different separations. If you ensure that it's not a spot color, it won't make much difference, if any, but your co-worker is probably right. For something like cyan, it's best to keep things simple.
