If I have read receipt option enabled, how do I view a list of users who read an email I sent out? I do not want a read receipt sent to my inbox after each user reads the email. However, I can deal with it if it is the only option to see the list later.
You have to receive them in your Inbox in order to get the information.
Tools>Options>Email Options>Tracking Options>
Check the appropriate boxes. Outlook will receive them, process them, and then delete them. Once they are processed, they generally show up in the tracking tab of the original item in your SENT ITEMS folder.
Keep in mind, though, that users can deny the read receipt from going back to you. Read receipts are not reliable.
