Users often try to set up their own Outlook acct on the client PC and set up as internet rather than corporate. Is there a way to undo the internet config to get back to corporate and not have to reinstall MSOffice software?

How about tools>>>>options>>>>Mail services>>>reconfigure mail services. Should keep all your settings.
