Outlook 2003 - email field auto deletes

I am trying to put a contact into Outlook 2003 and when I fill out his email address in the email field it auto deletes the information and changes the Display field to "John Stock ()".

Why would this be happening?

I'm also having issues sending emails to this address.

This is the only case I have ever seen something like this happen.
