Outlook 2000: How to reset install option? Or reset Address Book?

I happened to install Outlook 2000 on a machine here at work and set it for Email Only during the installation setup. We used to use an exchange server, and we no longer do, the mailboxes and address books have all been exported to files. This employee got a new computer, so I loaded him up with our software. The import loaded his Address Book entirely, and sorted it in his Contacts folder. The Address Book though does not read the various nested folders. I think this is from reading the wrong contacts folder and without the Exchange Services window (setup with the Exchange option during install), I can't set which folder the Address Book uses. Help!
