Outlook 2000 Appointments Disappearing

Greetings,

We have E5.5 on a NT4 server, all at latest SP's.
Users access their mailboxes with Outlook2K clients, and Exec's allow their assistants access to their calendars.

Our issue is that sometimes appointments that were put in either by the assistant or the Exec (on their respective machines - laptops) get moved or deleted without user intervention.
More facts:
Both are laptop users and have an Offline folder (yes I know about caching... but still!)
It is not because both users are inputing at the same time.
The Exec has a PDA (RIM) but tests with syncronization to Outlook did not cause any changes.
I have actually witnessed the appointment change times by itself!
The machine times maybe off by 30 seconds (including server)
Timezones are the same.
Office2K SP1 is applied

Any ideas??
