Outgoing email settings

I am trying to setup outgoing emails and I think I have set it up correctly, well infact I havent as I am writing this. But I am not sure what steps I have missed and I am wondering how I can troubleshoot it, are there any logs which can point me in the correct direction? In order to test it I created an email enabled list and added my name but received no mail.

I can see the following error in the ULS Logs:

Cannot connect to SMTP host ?????????????.
#160002: Cannot connect to SMTP host 'smtp.ihostexchange.net'.

This is MOSS2007 and here is my setup:

my outgoing mail settings are as follows:

outbound smtp server - mail.iris.cat
from address - info@iris.cat
to address - info@iris.cat
Char set - 65001 unicode UFT-8

Setting in IIS Manager are:

Delivery Tab, outbound security
Basic authentication selected
username and passowrd entered.

Outbound connections
Both limits checked. 1000,10,100,25 in the 4 option boxes.

Advanced
Maximum hop count - 15
Masquerade domain - blank
Fully-qualified domain name - sharepoint-Server.IRIS.local
smart host - mail .iris.cat


If you need any other settings please let em know.

I have checked the firewall is ok.
 
Here is the location of the MOSS log files - C:\Program Files\Common Files\Microsoft Shared\web server extensions\12\LOGS (that is in a default install). You may find something in there.

The only thing that seems strange is the smtp.ihostexchange.net error (I'm not super familiar with default SMTP settings, so this may be a default name or something). Do you have to access the smtp using a particular port or something of that nature?

Also, here is a link to a post regarding testing smtp. there is a post (the 3rd or 4th post) that tells how to test your smtp by using telnet from the SharePoint server -
