How do I set this up for amonth without leaving the PC turned on?

If you set it up through out of ofice assistant you need not leave the PC on, if you are using 2000 at least.
You haven't stated which O/S

If you're using Exchange server (and it's set up for this), using the 'out of office assistant' will do what you want on the Exchange server. If you're using a pop3 mail server, you need to check with the server admin. Many commercial pop3 providers have some facility to allow users to set something like this on the server.
